In a #medium pot{}, bring @water{5%cups} to a boil, then reduce to a low simmer.

Heat a drizzle of @olive oil{1%tbsp} in a #large pan{} over medium-high heat. Add @button mushrooms{8%oz}; cook, stirring occasionally, until browned and slightly crispy ~{5%minutes}. Season with @salt{1%tsp} and @black pepper{1%tsp}.

Heat a drizzle of olive oil in same pan over medium heat. Add @scallions{2%unit} whites, @garlic{3%cloves}, @arborio rice{1%cup}, and @butter{½%tbsp}. Cook, stirring, until garlic is fragrant and rice is translucent ~{1%minute}.

Add water, @veggie stock concentrate{2%tbsp}, and half the @sun-dried tomato paste{2%tbsp} to pan with rice mixture; stir until liquid has mostly absorbed.

Once risotto is done, stir in @shrimp{12%oz}, mushrooms, diced @tomato{1%unit}, @garlic herb butter{2%oz}, half the @parmesan cheese{½%cup}, and remaining sun-dried tomato paste. Cook, stirring occasionally, until tomato is softened ~{2%minutes}. TIP: If risotto seems too thick, stir in another splash of water.

Divide risotto between bowls. Top with scallion greens and remaining parmesan cheese. Sprinkle with a pinch of @chili flakes{1%tsp} to taste. Serve.
